The VERY VERY best blueberry cobbler!

Get out your 8x8 pan as you're going to need it.  YUM!!!!!!!!! :-) 3 - 3 1/4 cups fresh blueberries (can use frozen) 1 tsp vanilla 1/2 lemon, juiced 1/2 cup to 1 cup sugar 1/2 tsp flour 1 Tbs melted unsalted butter 1 3/4 cup flour 4 tsp baking powder 5 Tbs unsalted butter 1 cup milk (I used skim and it was fabulous) 2 tsp sugar 1 pinch cinnamon Grease an 8x8 square baking dish with cooking spray.  Place the washed blueberries into the baking dish, and mix with vanilla lemon juice.   Sprinkle with sugar (1/2 to 1 cup - depending on how sweet the berries are!) and 1/2 tsp of flour.  Stir in Tbs of melted butter.  Set aside. In a medium to large bowl, stir 1 3/4 cup flour, baking powder, and 6 Tbs sugar. Cut in 5 Tbs unsalted butter with a pastry blender or your fingers..  Continue until the mixture is in small pieces.  Make a small well in the center, and stir in the 1 cup milk.  Mix until barely moistened. ...

I have been scoring TONS of apples from The Produce Box deliveries. My daughter has been taking them for her lunch time fruit.  And I've been cutting them up for my own lunch :-) I kept thinking what should I make with my apples..  Applesauce or apple butter?  Hmmm, decisions, decisions..  Darling Daughter (DD) is not a jam or jelly fan so I went with the applesauce. I did NOT follow a recipe - I just "winged it".. Here you go :-) I peeled the apples. I bet I had at least 5 kinds! I think I probably peeled around 10 or so. I cored them and sliced them up I put them into the crockpot. I poured about 1/2 cup of water over the apples I then placed about 2 Tbsp of brown sugar over the top with 1 Tbsp of Splenda. Baked sweet potatoes

There is nothing like a sweet potato, baked, with butter and cinnamon. So easy and so good for you (well, the potato is, not sure about the butter!) All you have to do is wash the potatoes, and wash them well if you plan on eating the skins! Poke a few holes in them. Wrap in foil, I always make a big bunch of foil at the top for easy transporting.   Place on the grill.  They have to bake about an hour on the grill, depending on the heat and how big the potatoes are! If you are just going to microwave, depending on the size, it will probably take between 8-12 minutes, for 2.  This also depends on the size of the potatoes and the strength of the microwave. Unwrap, slice open, slap some butter and cinnamon on the top and gobble up! :-) Enjoy!

Pumpkin Shake (with bourbon if you want!)

I saw this recently and thought 'hmmmmm, I wonder if that would be good'. We made it tonight and I can happily say "YES it is!" 3-4 cups vanilla ice cream 1/2 cup pumpkin (cook your own!) see Fresh Pumpkin Recipe 3 oz bourbon (optional!) 1/2 cup milk 2 Tbs caramel sauce 1 tsp ground cinnamon 1/2 tsp ground nutmeg dash ground cloves whipped cream Combine first 8  ingredients in a blender.   Mix until smooth.  You may have to adjust the ice cream or milk. Pour into 2 glasses, top with whipped cream and a sprinkle of cinnamon. Enjoy!!

Apple Strudel

This is absolutely delicious.  It is a light dessert, and is very tasty :-) I had not worked with puff pastry very much and just let me say - it was very easy! 1 package of puff pastry sheets (thawed)  (these are typically packaged 2 to a box) 1 egg 1 Tbs water 2 Tbs sugar 1 Tbs flour 1/2 tsp cinnamon 2 large apples, peeled, cored, thinly sliced.  you can really use any kind, I mixed a large red with a large tart green apple decorating sugar crystals (if desired) Heat oven to 375.  Beat egg and water in small bowl with a fork.   Stir sugar, flour and cinnamon together in medium size bowl.  Add apples and raisins and stir well to coat the apple slices. Unfold pastry sheet on lightly floured surface.  Roll pastry sheet into 16x12 rectangle.  Spoon apple mixture onto bottom half of pastry sheet to about 1" of the edge.  Roll up as if it was a jelly roll.  Tuck the ends under to seal the juices in....

Apple bundles

I was blessed to get a few apples in my box this week.. I had to pry them out of my daughter's hands as she wanted to eat them right away.  Um, no. So, tonight when cooking dinner, I decided to throw together some apple bundles.. I cup up my special apples (both!) after peeling.  I diced them up so they would cook faster. I took a purchased pie crust (oh the horrors!) but that's all I had an it IS a weeknight, you know! I rolled it out a little larger and then cut it in half. I mixed the diced apples with about 1 Tbs of splenda and 1 Tbs of sugar.  I also put in 1 tsp of brown sugar.  Mix in about 1-2 teaspoons of cinnamon as well.   I cut up 2 Tbs of butter and mixed it all together. Spray a pan with cooking spray.  Place the pie crusts on the prepared pan. Place half the mixture on one of the sides of the pie crust, half on the other.  Pour any extra juice!
