7 Must-Try Spring Veggie Recipes

April showers bring May flowers – and delicious, fresh, local vegetables!  Some of our favorites? Beets, mushrooms, radishes, broccoli, cabbage, green peas, snow peas, and turnips, just to name a few. Of course we can’t predict the weather so we never know exactly what we’re going to get, but we gathered some of our favorite spring veggie recipes to get you thinking about what to make when you get your next Box!     Roasted Spring Veggie Medley – a great and simple side dish that pairs well with everything. Steamed Spring Vegetables with Garlic Herb Aioli –  a simple side dish with a delicious sauce. Food fight! Kale vs. Spinach

We all know that kale and spinach are both great for you, but we wanted to have these leafy greens face off to see which one is the better choice. Read below and let us know what you think! Fiber: Although both have fiber, spinach contains slightly more fiber than kale does.  Protein/Iron: Kale has more protein than spinach, but spinach has more iron than kale.  Calcium: Kale wins here, coming in with more calcium per serving than spinach. Magnesium : Spinach takes the prize for being higher in magnesium than kale. Vitamin C: Kale has almost four times more vitamin C than spinach! Vitamin A: Both kale and spinach have an incredible amount of vitamin A, but while spinach has about 400% of your recommended daily value, kale wins here because it has over 650%!!! Local Loves: Berry Towne Crafts

This week, we want to tell y’all a little bit more about one of our amazing artisan food makers – Berry Towne Crafts, a special place that creates great food, while lending a helping hand.  Part of the North Carolina Department of Health and Human Services, Berry Towne Crafts is an artisan therapy program for residents of the O’Berry Neuro-Medical Center in Goldsboro, NC. The O’Berry Center is a series of group homes providing care to 300 residents with developmental disabilities.  We love the mission and the people of Berry Towne Crafts so much though that we wanted to bring their snacks to your door! On our menu, you’ll see delicious pecan and peanut snacks from Berry Towne Crafts – some salty, some sweet, and always tasty.  The campus has its own pecan groves where the nuts are grown and harvested for your Boxes.
