Caramelized pecans/walnuts

I love caramelized pecans or walnuts.  And you will, too, if you make this recipe.  So easy! 2 Tbs butter 2 Tbs brown sugar Melt butter and brown sugar together in small pan - mix well Pour in 1 cup of pecans or walnuts.  Stir over low/medium hit for 2-3 minutes or until nuts are completely coated. Turn onto parchment paper, spread the nuts apart. Let cool, eat as a snack or add to a salad. That's the next recipe :-) My daughter said no to ice cream tonight, and ate the rest of the pecans instead!!!!! Enjoy!

My weekly bountiful box!!

Hmm, what shall I do with the goodies this week.. I know I'll make some sort of apple fritter..  I already used half the green beans.. I know I'll make my squash bake..  Hmm, what else..  Oh I'm sure I'll make a caprese salad using the fresh basil I still have growing in pots on my deck..  And I think I'll pour that yummy pepper relish over some cream cheese when I have guests next weekend.. Yum SCRUM!

My daughter LOVES fresh green beans.  I buy them in huge bags and snip and snap and cook them all the time. Today's bountiful box held a big container of fresh beans.  YUM scrum! I snapped them, cooked them up, and served them up with dinner.  SHE ate hers with garlic and butter, I slapped butter and fresh cracked black pepper on mine.  Doesn't matter what you put on them, as long as you get your veggies in every day! fresh green beans small pot of water Bring beans to a boil, let simmer about 7-9 minutes, depending on how soft you like the beans. *I* do not like mushy beans, so I err on the lesser time frame.. When cooked to your liking, drain, and place in a bowl.  As I said, I like butter and black pepper, daughter uses fresh garlic and butter..  Enjoy!

Tomatoes..

We LOVE tomatoes at my house.  Today I had some small tomatoes left and so I served them up in a bowl with a bit of Blue Cheese dressing.. Yum.. Eat your veggies, everyone!

Sausage and peppers..

I have always been a huge sausage fan - maybe it's my german heritage?  Who knows.. Anyway, I snapped up some lite turkey sausage the other day and my daughter suggested I cook it with lots of peppers and onions.  And so I did.  And yes, it was yummy! One pound of sausage peppers of any sort, sliced, I used a mandoline to slice mine up as fast as possible! onions, sliced olive oil I used a large dutch oven, heated olive oil in it and then threw the sausage in as well as the peppers.  I had to add water while it was cooking so it didn't dry out. I cut the sausage into pieces about half way through the cooking time, maybe 8 minutes or so. I served this with rice.  We both gobbled it up! Enjoy!

my "other life"

in my real life, I have a "real job" that I work 40+ hours a week..  Then again, don't we all?!? However, for fun, I cook and have a grand time doing so! I also have another blog - Cookies & Curtains Come and check it out if you have time! And as always - ENJOY! Jane

Apple bundles

I was blessed to get a few apples in my box this week.. I had to pry them out of my daughter's hands as she wanted to eat them right away.  Um, no. So, tonight when cooking dinner, I decided to throw together some apple bundles.. I cup up my special apples (both!) after peeling.  I diced them up so they would cook faster. I took a purchased pie crust (oh the horrors!) but that's all I had an it IS a weeknight, you know! I rolled it out a little larger and then cut it in half. I mixed the diced apples with about 1 Tbs of splenda and 1 Tbs of sugar.  I also put in 1 tsp of brown sugar.  Mix in about 1-2 teaspoons of cinnamon as well.   I cut up 2 Tbs of butter and mixed it all together. Spray a pan with cooking spray.  Place the pie crusts on the prepared pan. Place half the mixture on one of the sides of the pie crust, half on the other.  Pour any extra juice!
