5 reasons we love that Winter Squash


This is the time when you will start seeing winter squash in many of our Boxes. Local farmers like Gary from Fuller Farms are working hard to grow and harvest this bountiful seasonal veggie. What to do with the squash in your Produce Box? Whether it's Butternut, Acorn, Spaghetti or even Butterkin, we have a few ideas for you!

1. Deliciously simple to roast. Roasting a winter squash is a sure way to permeate your home with a hearty warmth before the meal is even served. After roasting (and cooling for a minute) the squash is ready to serve or scoop out of the shell.

2. Perfect in lasagna or quesadillas. Many winter squashes have a deep yellow or almost “cheesy” color that blends well with cheese or in place of it. Its sweet and light flavors complement many of our family favorites.

3. Versatile flavors that shine in sweet or savory dishes. The winter squash is equally delicious roasted on the half shell with a dot of
butter, brown sugar and cinnamon or cut into wedges and tossed with olive oil, sea salt, cumin, and chili powder. There are limitless possibilities for new ways to enjoy the different varieties that our farmers are growing.


4. Hello Superfood! Winter squashes are naturally high in fiber, Vitamin C, potassium, B Vitamins, and a wealth of other nutrients. While most of the local produce scene is looking green and leafy this time of year, the winter squash is a bright refuge with a different taste and texture but still packed with lots of veggie goodness.

5. They take their time. Throughout the summer we are often held captive to our warm weather crops, sometimes scrambling to finish all the zucchini from our Box. Winter squashes like to take their time and are happy to sit decoratively on your counter until you are ready to enjoy them. They can be stored for weeks or even months in a cool dry spot but they never last that long around here!
