Roasted Romanesco Cauliflower

I can imagine if you got this in your box this week, you thought "WHAT in the world?!?"  LOL



I figured I'd dive right in and cook it..

So, pasta for dinner last night, I figured a roasted veggie would taste awesome with it.

Wash the cauliflower.

Preheat oven to 400.

I cut up the cauliflower, removing the inner bitter stalk.  I made pieces bite size, tried to get them all the same, but it didn't really work out that way..  I then washed it again.





I let it air dry, then placed it on a cookie sheet sprayed with non stick spray.

I poured a bit of olive oil over the top, and cracked both sea salt and black pepper over all  I then put a bit of red pepper flakes over the top.  And then I mixed it up a bit, just to try to get all coated with the olive oil and spices. 

I roasted for about 30 minutes, and the cauliflower was nice and brown in some places.  Not all over, but definitely "cooked".



I then put a bit of parmesan cheese over the top and served it on the side of the pasta I had made.  Absolutely FABULOUS.  I gobbled it up.



YUMMY!  Going to definitely get some more in my box next week if I can :-)
